Fourth of July Cookout Ideas

“its hot, who wants to cook!?”  I do!

Cook these kebabs beforehand and bring them to your Party…Simple, Gourmet and Healthy

 

Blood Orange Marmalade Marinated Salmon, Nectarine and Strawberry Kebabs

3 lbs of Fresh Salmon

1 jar Bella Cucina Blood Orange Marmalade or other Citrus Marmalade

1 teaspoon fresh dill or mint

6 each fresh nectarines

2 pints fresh cleaned Strawberry

2 pinches of salt (kosher is best)

10 skewers soaked for 1 hour

Process:

Cut the Salmon in cubes a little bit larger then bite-size. Place in bowl with the marmalade and herbs. Add 2 pinches of kosher salt. Toss well and place on a greased baking pan. Bake 10 mins or till fully cooked. Let cool completely and separate into bite size chunks.

Cut the Nectarines and Strawberries into bite size cubes. With a skewer create kebabs and serve cool.
